Right
on the slopes of the fascinating Pollino massif, at Saracena, in the
Province
of Cosenza, stands the Chiaramonte oil mill, its owner, Signor
Leone, with care and passion for his work, considered by him as a
real art, for over thirty years has been occupied with all the production
phases, from the choice, gathering and milling of the olives, up to
the bottling of the finished product. |

The
olives, all taken from selected plants and from the green and sunny
hills of Saracena, are gathered by traditional hand picking and then
milled with grindstones; all this is done in the shortest possible time,
to maintain the flavour and freshness of the oil intact. From the dough
obtained, with a pressing method, the oil must is extracted and
from this, by centrifugal separation the oil is obtained. |

The
Chiaramonte oil mill offers a vast range of products. In fact the
splendid virgin and extra-virgin oils can be purchased, excellent for
all cooking purposes are the original scented oils, with chilli pepper
or with a combination of thyme, garlic and chilli pepper, that make any
dish tastier, and the prized crude oil, an elixir obtained from
the dough as yet not pressed. The production of this kind of oil is very
limited, indeed, the lovely unusual bottles are all numbered. |
